Airstream, billiards suites among unique amenities of first hotel to open on El Paseo

A vintage Airstream trailer turned into a luxury suite, a restaurant run by local chefs, a spa, an entertainment stage and a gallery exhibiting the works of local artists are among the amenities to be featured in Palm Desert’s first hotel on El Paseo.

Hotel Paseo, the three-story, 150-room luxury boutique hotel – the city’s first new luxury hotel built in more than 30 years – is on schedule to open late October or early November, general manager Gil Reyes said.

Construction started on the $36 million hotel in November 2015.

Part of the Evolution Hospitality and Autograph Collection Hotels family which operates under the Marriott umbrella, Hotel Paseo will offer many unique features, Reyes said.

One thing about Autograph Collection Hotels is that they don't replicate each other in design.

“Each has its own story to tell,” Reyes said.

For Hotel Paseo, the story is, “Find Your Path,” which lends itself to the immediate and surrounding area with a variety of restaurants, shopping, entertainment, hiking and other “adventure” options, all within a short distance of the hotel.

Built on a vacant lot at 45-400 Larkspur Lane, which for many years was home to Fashion Week El Paseo, the hotel is well situated across from the annual event’s current location – the top level of The Gardens on El Paseo parking garage.

“This is a great location,” Reyes said.

Leading a hard-hat tour of the construction site, he pointed to a large wooden crate against the north wall of the pool area.

“That’s the Airstream trailer,” Reyes said, which will serve as the hotel’s 150th room.

As plans for the hotel were being laid out, Marriott wanted to expand the size of the gym on the first floor, which meant loss of a room, he said.

Hotel owner and co-developer Robert Leach proposed putting a fully renovated and furnished Airstream on the property, turning it into a specialty suite that can have a variety of uses, Reyes said.

The main entrance is off of Larkspur Lane and takes guests right into the lobby area with check-in to their left and a spacious seating area to their right where the works of local artists will be exhibited on the north wall. The work will be rotated quarterly, Reyes said.

Three of the desert’s popular restaurateurs are teamed up to open AC3 restaurant and Bar, on the north end of the hotel which will be open to the public. With full bar, indoor and patio seating the restaurant will be able to seat about 200, Reyes said.

Also open to the public will be the hotel’s expansive spa with seven treatment rooms. The spa operator will be announced soon, he said.

The 2,000-square-foot outdoor area will have artificial lawn, a pool with three private cabanas, an in-ground whirlpool spa, café with bar, fire pit, stage for live performances plus bocce ball court, cornhole toss and shuffle board games. Outdoor movie screenings are also planned, Reyes said.

Reyes has worked in the hospitality industry for about 20 years, the past 11 in senior management positions. He was hired to run Hotel Paseo about three months ago, and he and his wife wasted no time relocating from Anaheim, buying a house in Palm Desert for them and their four children.

“I really want to be a part of the community,” Reyes said, adding he is already on the Palm Desert Area Chamber of Commerce’s board of directors.

Minus the restaurant, the hotel will employ up to 60 full- and part-time positions. Applications are being taken now for management positions and will be accepted for front line jobs starting at the end of August. Applications are available online at www.evolutionhospitality.com.

Room rates will range from the mid-$200s to $600 per night, Reyes said, depending on time of year and room size. In addition to the Airstream, eight other specialty suites include a “Billiards Suite” with billiards table, record player with a collection of old and new vinyl, wet bar and lounge area.

Rooms can now be booked online at www.hotelpaseo.com for dates starting in January. As construction continues and an opening date is solidified, fall dates can start to be booked, Reyes said.

The Great Date: 5 Places to Indulge in the Desert

The desert may have a reputation for being a harsh place to grow … well, anything … but the Coachella Valley and surrounding area is home to dozens of local farms – many of which supply Two Bunch Palms restaurant Essense with its organic, seasonal produce.

No crop, however, is better known in these parts than the sweet and succulent date, which have been flourishing in the Coachella Valley since offshoots from the Middle East were planted more than a century ago. The region now supplies 95 percent of the country’s date supply, so whether you’re a bona fide date fan or need a little nudge to give ‘em a try, this is the place to be when it comes to date dishes.

Here, five different interesting and inventive takes on the great date:

It’s the kind of dreamy dish that would make any omnivore want to swap bacon and eggs for a vegan breakfast: a luscious coconut milk-based pudding spiked with nutrient-dense chia seeds, toasted almonds, and, yes, dates. Sticking with Essense’s focus on local, seasonal, and sustainable organic produce (some of which it gets right there on the Two Bunch Palms property), Executive Chef Jenna van Loon sources her dates from nearby Golden Girl Date Farm, just 30 miles down the road in Coachella.

Before you write this one off for being too weird, think about it: If you like dates and you like sushi, you might as well try both at the same time, right? At this popular Japanese restaurant along bustling Palm Canyon Drive, the Palm Springs roll is stuffed with snow crab and avocado, topped with tuna and Tokyo scallions, and then served over a date-dotted arugula salad … giving new meaning to the term sushi date.

Andie Hubka, chef and owner of this neighborhood wine bar and small-plates restaurant, uses Medjools for her local date plate, stuffing them with Point Reyes Blue Cheese (creamier than regular old blue.) The dates get hit with a blow torch, which caramelizes the tops, releases some of the natural sugars, and gets the cheese nice and bubbly. The plate is finished with sliced almonds and a drizzle of chive-and-garlic-infused olive oil. Many customers actually order the dish for dessert. Hey, no judgments!

At this Vietnamese-American joint, chef and owner Tai Spendley focuses on taking traditional Vietnamese dishes and giving them an unexpected twist, often with ingredients that aren’t usually found in Vietnamese cooking. Case in point: The chilled spring roll is infused with Asian flavors thanks to lemongrass-marinated pork, cilantro, and Thai basil, but then gets a nod to the Coachella Valley with the addition of diced Medjool dates, too.

Many visitors simply can’t bear to pay a visit to the Valley without stopping for a cool and creamy date shake, perhaps the most iconic date item in the desert. While you’re never too far from a date shake around here, you can find a famous favorite at Hadley Fruit Orchards, which has been churning them out for decades. The shop uses Deglet Noor dates blended with vanilla ice cream and milk to create a just-lumpy-enough-to-be-lovely creamy shake. You’ve also got the option to add banana, nutmeg, or cinnamon to the sweet treat … but you can’t go wrong with the original, if you ask us.

I had the good fortune to dine several times in the past couple of months at the absolutely beautiful, Le Paon in Palm Desert.

Le Paon combines “old world” elegance with Contemporary French Cuisine to provide you with the special dining experience you are looking for.

This award-winning, 4-star Contemporary French Cuisine Restaurant is owned and staffed by the renowned Babai brothers. Executive Chef Eddie Babai was trained in classical cooking at the Cordon Bleu in Paris and at the Culinary Institute of America in Hyde Park, New York. General Manager and Maitre d’ Antoine Babai was twice nominated Restauranteur of the Year Award by the California Restaurant Writers Association.

I enjoyed the Beet Salad and Deep Sea Scallops in a white wine cream saffron sauce the prior visit and the Prix Fix Menu this last week. I enjoyed the Stuffed Artichoke Bottom, Salad Le Paon, Filet of Sole and Grand Marnier Souffle. The Prix Fix menu is a bargain at $45.00. My dinner mates enjoyed Hearts of Palm salad, Tomato and Onion salad, Deep Sea Scallops and Tournedos Neptune. Absolutely everything was done to perfection. I can honestly say I've never had anything less than steller at Le Paon, be it appetizers in the bar pre theater or dinner in the gorgeous dining room.

The Palm Springs restaurant scene continues to change and adapt, though not quite as often as LA's, but still with the fervor that a smaller city might not usually see. It's helpful that major events like Coachella and Desert Trip bring tens of thousands of visitors to the area, plus plenty of snowbirders once the weather cools off in the fall and winter months.

As a teenager, growing up on the other side of the mountain in Hemet, I used to drive to Melvyn's on the weekends to model in their lunchtime fashion shows, then hit Saks for a bit of shopping before heading back home and to high school. In most places, the past four decades have been a time of dizzying change.

But at Melvyn’s restaurant, Frank only means Sinatra, Coachella headliners go unrecognized, and a steady patter of one-liners trumps talking politics.

Bobby Bolduc, 81, a dining room captain, has been working here for 42 years. He has seniority over waiter Manuel Castaneda, who’s worked 41 years, and maitre d’ Brian Ellis, who’s been here 42 years but started off as a backroom waiter under Bolduc.

Chef Juan Castaneda said he is in awe over the way “these gentlemen keep doing what they are are doing.” He’s been in charge of the kitchen for only 38 years.

Stories? They’ve got stories

“Nothing bothers Bobby. The place could go up in flames, and he’d keep cooking his steak Diane,” said Ellis, shaking his head of still-thick hair.

“Let me tell you about what happened right over there at Table 32.”

In 1990, John Compton Harvey — a man police later would describe as silver haired and distinguished looking — was having dinner at his regular table.

Suddenly, undercover law enforcement agents planted around the dining room jumped up and drew their guns. Bolduc was table-side, cooking. An agent held a gun to his head.

The way Ellis tells it, Bolduc kept cooking.

“I was pouring a glass of Dom Perignon when they put a gun on me because they didn’t know what I would do,” Bolduc corrected.

He said he was cooking the steak while they handcuffed and took away Harvey — who turned out to be wanted in 10 counties on a variety of fraud, forgery and embezzlement charges.

Bolduc boxed up the steak Diane and ran after them.

FBI agents paid for the dinner. But they didn’t tip.

Harvey always tipped $100, Bolduc said.

It's Wilma and Frieda's turn to simmer in the spotlight.

The popular breakfast and lunch cafe at The Gardens on El Paseo in Palm Desert is the latest desert eatery to be featured on Guy Fieri's "Diners, Drive-ins and Dives."

The episode, titled "Island and Desert", airs at 9 p.m. Friday on the Food Network.

Wilma and Frieda's Executive Chef Chad Spears will serve up the short rib melt which features local artisan baked bread, slow-braised short rib, pickled onions, sautéed arugula and melted Monterey jack cheese.

Then Pastry Chef Camilla Goetz will take over the kitchen to show Fieri how they make the W & F Breakfast tart, which owner Kelly McFall describes as "like a pop tart but with Meyer lemon blueberry, iced and with rainbow sprinkles."

Sherman’s Deli & Bakery and Grill-A-Burger, both in Palm Desert, Frankinbun in Palm Springs, and Zobo & Meester's in Cathedral City, all have been featured on recent episodes. They all opened their doors to Fieri and the Food Network crew in late March and early April.

The Desert Sun caught up with McFall via e-mail to talk about her episode. Here's a Q and A.

Q: Why was the short rib melt and breakfast tart selected to be featured?

A: The producer selected 10 dishes, then they are presented to Guy and he chooses what he feels would be the most tasty and fun things to try.

Q: Were your chefs nervous cooking for Guy?

A: I think they both were before the show, but the production team and Guy are so fun and the nervousness soon disappeared. The production team are total professionals and prepare the team on camera very well as to what to expect.

Q: What was the experience like having Guy in the restaurant?

A: It was even better than expected. Guy is very quick and smart and he likes to joke a lot, so it easily puts you at ease, especially when on camera. He was especially sweet to my mom, Jan.

Q: Are you ready for the traffic that is expected after the episode airs?

A: Yes, we are a pretty busy cafe, so the team is excited to have new faces come in and give us a try. Plus we have a new restaurant opening in downtown Palm Springs in the fall so we will have more opportunity for guests to come and visit us. In addition our new location has a much larger kitchen that will help us increase production.

Q: What are you doing to prepare for the Guy Fieri effect?

A: We increased the amount of our orders to accommodate the demand, and have prepared the staff to talk to our guests about what Guy enjoyed eating in our cafe. We have also placed Guy's signature and avatar in a location under glass that provides a nice photo op area for Guy's fans.

Located on top of The Gardens on El Paseo, Wilma & Frieda’s Café offers craveable breakfast and lunch comfort food at the popular outdoor shopping center.

Wilma & Frieda is named for owner Kelly McFall’s maternal and paternal grandmothers. Her memories of the American homestyle cuisine practiced by her grandmothers inspired the menu here, albeit with some modern twists. McFall tweaked Frieda’s recipe for blueberry French toast by combining an egg custard bread-pudding with fresh blueberries and topping it with a Madagascar vanilla crème anglaise. The Banana Caramel French Toast, topped with a sour cream drizzle, gives it a decadent taste akin to cheesecake.

Breakfast is served all day, every day. Hearty concoctions such as Griddled Meatloaf & Eggs or Short Rib Eggs Benedict are perfect to fuel up for the day. Lunch options like the five-cheese mac and cheese with pancetta provoke mouthwatering nostalgia. The burger on the menu is a patty from award-winning butcher Pat LaFrieda. It’s made from center-cut ground chuck and short rib blend and is served on a brioche bun with garlic aioli, lettuce, and tomato. Customize it with your choice of toppings.

A highlight of the dessert menu is house-made “pop” tarts. Guests order them for a breakfast appetizer.
